Ingredients

- 1 lb beef stew meat, cut into cubes
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 potatoes, cubed
- 2 garlic cloves, minced
- 4 cups beef broth
- 1 can diced tomatoes (14 oz)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Set your Ninja Speedi to ‘Sear/Sauté’ and heat the olive oil.
- Add the beef cubes and sear until browned on all sides. Remove and set aside.
- In the same pot, add onions, carrots, and celery. Sauté until softened.
- Add garlic and cook for an additional minute.
- Return the beef to the pot. Add potatoes, beef broth, diced tomatoes, thyme, rosemary, salt, and pepper.
- Close the lid, set the Ninja Speedi to ‘Pressure Cook’ mode, and cook for 20 minutes.
- Release the pressure according to the manufacturer’s instructions.
- Serve hot and enjoy!
Notes
- Feel free to add other vegetables like peas or green beans.
- You can thicken the stew with a cornstarch slurry if desired.
- Leftovers can be stored in the refrigerator for up to 3 days.
