Ingredients

  • 1 lb beef stew meat, cut into cubes
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 potatoes, cubed
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 1 can diced tomatoes (14 oz)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Set your Ninja Speedi to ‘Sear/Sauté’ and heat the olive oil.
  2. Add the beef cubes and sear until browned on all sides. Remove and set aside.
  3. In the same pot, add onions, carrots, and celery. Sauté until softened.
  4. Add garlic and cook for an additional minute.
  5. Return the beef to the pot. Add potatoes, beef broth, diced tomatoes, thyme, rosemary, salt, and pepper.
  6. Close the lid, set the Ninja Speedi to ‘Pressure Cook’ mode, and cook for 20 minutes.
  7. Release the pressure according to the manufacturer’s instructions.
  8. Serve hot and enjoy!

Notes

  • Feel free to add other vegetables like peas or green beans.
  • You can thicken the stew with a cornstarch slurry if desired.
  • Leftovers can be stored in the refrigerator for up to 3 days.
