- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1/4 tsp salt
- Zest of 2 lemons
- 2 tbsp lemon juice
- 1 tsp vanilla extract
- Extra powdered sugar for dusting (optional)
Instructions
- In a large mixing bowl, cream together the butter and powdered sugar until smooth and fluffy.
- Mix in the lemon zest, lemon juice, and vanilla extract until well combined.
- Gradually add the flour and salt to the butter mixture, mixing until a dough forms.
- Turn the dough out onto a piece of plastic wrap, shape into a disk, and chill in the refrigerator for at least 1 hour.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the dough to about 1/4 inch thickness. Cut into desired shapes using cookie cutters.
- Place cookies on the prepared baking sheet and bake for 10-12 minutes, or until the edges are just starting to turn golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Dust with additional powdered sugar before serving, if desired.
Notes
- Keep an eye on the cookies as they bake, as they can go from perfectly done to overdone quickly.
- Store in an airtight container at room temperature for up to a week.
