Instructions

  1. In a large mixing bowl, cream together the butter and powdered sugar until smooth and fluffy.
  2. Mix in the lemon zest, lemon juice, and vanilla extract until well combined.
  3. Gradually add the flour and salt to the butter mixture, mixing until a dough forms.
  4. Turn the dough out onto a piece of plastic wrap, shape into a disk, and chill in the refrigerator for at least 1 hour.
  5. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. On a lightly floured surface, roll out the dough to about 1/4 inch thickness. Cut into desired shapes using cookie cutters.
  7. Place cookies on the prepared baking sheet and bake for 10-12 minutes, or until the edges are just starting to turn golden.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  9. Dust with additional powdered sugar before serving, if desired.
