- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 16 ounces gnocchi
- 2 cups fresh spinach, chopped
- Grated Parmesan cheese, for serving (optional)
Instructions
- In a skillet over medium heat, warm the olive oil. Add the chicken and cook until browned on both sides. Transfer the chicken to the crockpot.
- Add the onion, garlic, carrots, celery, chicken broth, thyme, rosemary, salt, and pepper to the crockpot.
- Cover and cook on low for 6 hours or on high for 3 hours.
- After the cooking time, remove the chicken from the crockpot, shred it with two forks, and return it to the pot.
- Add the heavy cream and gnocchi to the crockpot. Stir well and continue to cook on high for an additional 30 minutes, or until the gnocchi is tender.
- Stir in the chopped spinach and cook for another 5 minutes, or until the spinach is wilted.
- Serve hot, garnished with grated Parmesan cheese if desired.

- You can use store-bought or homemade gnocchi for this recipe.
- For a lighter version, you can substitute the heavy cream with half-and-half or a milk alternative.
- To make this soup gluten-free, use gluten-free gnocchi and ensure that the chicken broth is gluten-free.
