  • 1 cup heavy cream
  • 16 ounces gnocchi
  • 2 cups fresh spinach, chopped
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. In a skillet over medium heat, warm the olive oil. Add the chicken and cook until browned on both sides. Transfer the chicken to the crockpot.
  2. Add the onion, garlic, carrots, celery, chicken broth, thyme, rosemary, salt, and pepper to the crockpot.
  3. Cover and cook on low for 6 hours or on high for 3 hours.
  4. After the cooking time, remove the chicken from the crockpot, shred it with two forks, and return it to the pot.
  5. Add the heavy cream and gnocchi to the crockpot. Stir well and continue to cook on high for an additional 30 minutes, or until the gnocchi is tender.
  6. Stir in the chopped spinach and cook for another 5 minutes, or until the spinach is wilted.
  7. Serve hot, garnished with grated Parmesan cheese if desired.
