Whip up something unexpected for breakfast with our breakfast sliders! Whether you’re hosting brunch, making a fun family breakfast or meal prepping for the week, these breakfast sliders are such a great choice. We use mini bagels as the slider’s serving vessel, and we layer in cheddar cheese, Canadian bacon, American bacon, scrambled eggs and cream cheese. The gorgeous sliders are finished with a maple syrup glaze and everything bagel seasoning to boot. They’re unlike anything you’ve had before!
Ingredients for Breakfast Sliders
- Eggs: You’ll need almost a whole carton of eggs for this recipe. While at the store, open the carton to make sure none of the eggs are cracked.
- Cream cheese: We recommend a chive-onion spreadable cream cheese for additional savory flavor, but regular cream cheese or a different flavor of cream cheese works here, too.
- Mini bagels: You can usually find mini bagels at most grocery stores.
- Cheddar cheese: We highly recommend going with sliced cheddar cheese (shredded cheese might make assembling the sliders messier). Sliced cheese lays nicely and is easy to stack among the other ingredients.
- Bacon: We use two types of bacon (Canadian bacon and American bacon) because, well, you can never have too much bacon! You can buy fully cooked American bacon to make the recipe easier, or go the extra mile and cook the bacon from raw for extra-fatty, rich, crispy strips.
- Everything seasoning blend: This type of seasoning is usually pretty common to find in most grocery stores. Check out our list of where you can buy everything bagel seasoning to see where it’s at!
Directions
Step 1: Whisk the egg mixture
Preheat the oven to 375°F. Heat a large nonstick skillet over medium heat. In a large bowl, whisk together the eggs, milk, green onions and pepper until very well blended.
Step 2: Cook the egg mixture
Pour the egg mixture into the hot skillet. Cook and stir the eggs until they’re thickened and no liquid egg remains. Immediately remove from heat.
Editor’s Tip: There are so many ways to do this, but here’s how we like to cook scrambled eggs for the fluffiest eggs possible.
Step 3: Spread the cream cheese
Spread the cream cheese evenly over all the bagel bottoms. Place the bagels (cream cheese side up) in a greased 13×9-inch baking dish.
Step 4: Layer on the cheese
Layer each bagel with one cheese piece.
Step 5: Arrange the Canadian bacon
Place the pieces of Canadian bacon on top, too.
Step 6: Add the scrambled eggs
Spoon the scrambled eggs over the tops.
Step 7: Top with the remaining cheese
Layer the eggs with the remaining cheese pieces.
Step 8: Finish with even more bacon
Arrange the eight strips of cooked American bacon on top.
Step 9: Pop the lids back on
Place the bagel tops back on.
Step 10: Create the glaze
In a small bowl, stir together the melted butter, maple syrup and garlic powder.
Step 11: Brush the glaze on
Using a pastry brush or a spoon, brush the glaze onto the bagel tops.
Step 12: Sprinkle with seasonings
Sprinkle the tops with the everything seasoning blend.
Step 13: Bake
Bake the breakfast sliders until the tops are golden brown and the cheese is melted, 12 to 15 minutes.
Recipe Variations
- Swap the bagels for buns: Can’t find mini bagels? Fluffy and soft Hawaiian rolls are perfect with sliders! Their irresistible pillowy texture and pre-portioned assembly is the ideal starchy vessel for these mini sandwiches.
- Sneak in veggies: Sautee some spinach, zucchini, cherry tomatoes or onions, and layer them in the sliders after the scrambled eggs.
- Use a different cheese: Not a fan of cheddar? Slices of provolone, Muenster and smoky Gouda would work here, too.
- Add some heat: Layer a few pickled jalapenos in these sliders for a subtle crunch and a good kick of heat, or dump in your favorite hot sauce on top of the scrambled eggs. Here are the best hot sauce brands according to our Test Kitchen pros who do a lot of cooking and eating!
- Sprinkle in herbs and spices: Raid your spice rack for dried basil, dill, chives, garlic or turmeric. Fresh herbs work for added brightness, too!
How to Store Breakfast Sliders
Let the breakfast sliders come to room temperature, then wrap them individually in storage wrap or aluminum foil. They can also be stored in an airtight container. However you wrap them up, stick them in the fridge and only keep them for up to four days.
Breakfast Sliders Tips
What should I serve with breakfast sliders?
These breakfast sliders are hearty and filling, so serve a nice fruit salad on the side to cut the richness. A fun cup of coffee—like one of your favorite copycat coffee shop drinks—is always recommended!
Can I make these ahead of time for meal prep?
Yes, you can make these breakfast sliders ahead of time to enjoy throughout the week. After baking the sliders, cut them into their portions, and allow them to cool completely to room temperature. Wrap each one individually in storage wrap or aluminum foil and stick them in a resealable bag.
When you’re ready to eat one, remove the wrappings or foil, wrap the slider in a paper towel, and reheat the breakfast slider on a microwave-safe plate.
