- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 4 oz cream cheese, softened
- 1/2 cup strawberry jam
- 1/2 cup fresh strawberries, diced
- 1/4 cup graham cracker crumbs, for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat together the butter, sugar, and cream cheese until smooth and creamy. Add the egg and vanilla extract, mixing well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the diced strawberries.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet. Make a small indent on the top of each cookie with your thumb or the back of a spoon, and fill each indent with a teaspoon of strawberry jam.
- Sprinkle graham cracker crumbs over the top of each cookie.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a gluten-free version, substitute all-purpose flour with your favorite gluten-free flour blend.
- Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
